title: Cast-Iron Chicken Thighs with Apple-Bacon Pan Sauce
pack: founders-pack
servings: 3
ingredients:
  - 3 boneless skin-on chicken thighs (or 6 if feeding bigger appetites)
  - Kosher salt and black pepper
  - 1 tbsp neutral oil
  - 1 large apple (Honeycrisp or Granny Smith), diced ~1/2"
  - 1 large shallot, thinly sliced
  - 2 tbsp apple cider vinegar
  - 1/2 cup apple cider or apple juice (chicken stock works in a pinch)
  - 1 heaping tbsp apple or bacon jam (or apricot jam + pinch of smoked paprika)
  - 2 tbsp cold butter
  - Fresh thyme, a few sprigs
  - "[[Candied Bacon]] chopped, for topping"
instructions:
  - "**Dry and season** — Pat thighs completely dry. Season both sides with salt and pepper. Let sit at room temp 15–20 minutes while you dice the apple and slice the shallot."
  - "**Sear skin-side down** — Heat cast iron over medium-high with the oil until shimmering. Lay thighs skin-side down and don't touch them. Sear 7–8 minutes until the skin releases on its own and is deep golden."
  - "**Flip and cook through** — Flip and cook 5–6 minutes more to 175°F internal at the thickest point. Move thighs to a plate, tent loosely. Don't wipe the pan — the fond is the sauce."
  - "**Build the pan sauce base** — Drop heat to medium. Add shallot to the chicken fat, cook 1 minute. Add diced apple and thyme, sauté 3–4 minutes until apples soften at the edges but still hold shape."
  - "**Deglaze and reduce** — Deglaze with the cider vinegar, scraping up the fond. Add the cider and jam, simmer 2–3 minutes until reduced by about half and lightly syrupy."
  - "**Mount with butter** — Kill the heat. Swirl in the cold butter one tablespoon at a time until the sauce is glossy. Taste — it should hit sweet, acid, and salt; adjust with a splash more vinegar or a pinch of salt."
  - "**Slice the chicken** — Slice each thigh against the grain, ~1/2\" thick. Fan one sliced thigh per plate."
  - "**Plate and serve** — Spoon sauce and apples over the sliced chicken. Shatter candied bacon on top. Serve immediately."

notes:
  - "summary: Skin-on chicken thighs seared in cast iron, rested, then plated under a glossy apple-cider pan sauce built from rendered fat and fond — sweet, acidic, and finished with cold butter."
  - "Skin-side-down sear does 80% of the cooking — the skin protects the meat and renders the fat the whole sauce is built on. That's why cast iron beats the oven method here: no fond, no sauce."
  - Pull to 175°F, not 165°F — thighs need the higher temp to render properly.
  - "The jam is the tie: it dissolves into the sauce and marries apple, bacon fat, and chicken fond instead of leaving them as separate elements."
  - Butter goes in off-heat or the sauce breaks.
  - "Sides tonight: roasted sweet potatoes and salad. Sweet potatoes in at 425°F ~40 minutes before serving; start the chicken when they have 25 minutes left."
  - Sauce won't keep well with the crisp skin; store leftovers with sauce separate if possible.
