Blend the strawberries — Blend strawberries, honey and lemon juice until completely smooth. If using frozen berries, add everything to a pot, simmer on low until the berries are thawed and then blend. If using blueberries for the swirl, repeat step 1.
Prepare the baking sheet — Line a rimmed baking sheet with parchment paper. You could also use a silicone baking mat.
Add the puree — Pour on the puree and spread it into a very even layer, roughly 1/4 inch thick. To create the swirl, add blueberry puree to a ziplock bag, make a small hole on one corner and pipe it on top of the strawberry. Take a toothpick and from the center drag a line to the edge, repeating until you get your desired pattern.
Bake the puree — Bake 2-3 hours, beginning to check around 2 hours. It's ready when the surface is dry to the touch and no longer sticky, but still flexible.
Cool and rest — Let it cool and rest for at least 2 hours. It actually softens as it rests.
