  • 2 1/2 tbs (35 g) unsalted butter
  • 1/4 cup (52 g) packed brown sugar, light or dark
  • 1 large (18 g) egg yolk
  • 1/4 tsp vanilla extract
  • 1 tbs (8 g) all-purpose flour, spooned and leveled
  • 3.5 tbs (17.5 g) natural unsweetened cocoa powder, spooned and leveled
  • Pinch of kosher salt
  • 1 tbs (14 g) chocolate chips, optional
  • Cooking spray or butter, for greasing pan
  • 1Preheat and grease — Preheat the oven to 350 degrees F. Well grease a large (10 ounces to very top or about 4.25 inches wide across the top) with butter or cooking spray. Add a circle of parchment paper to the bottom.
  • 2Melt butter and sugar — Add the butter and brown sugar to a microwave-safe medium mixing bowl and microwave for about 30 seconds or until the butter is melted. Use a fork or whisk to well stir the butter and sugar together to combine.
  • 3Mix yolk and vanilla — Add the egg yolk and vanilla to the mixture and mix with a fork or whisk to well combine. The mixture should become lighter in color.
  • 4Fold in dry ingredients — Add the flour, cocoa powder, and pinch of salt then fold together with a rubber spatula. Fold in the chocolate chips, if using.
  • 5Bake the brownie — Add the batter to the ramekin (or divide between the muffin cups). Bake the ramekin for 24-26 minutes. The brownie is done when the edges are set and a toothpick in the center comes out with fudgy/moist brownie crumbs, but not wet batter.
  • 6Cool and enjoy — Allow to cool and enjoy!
