1 lb cooked chicken thighs, sliced — Roasted Boneless Skin On Chicken Thighs is the natural batch to make ahead; Grilled Chicken Thighs works just as well Smoked Chicken Thighs I haven't tried but probably really good here too
3 cups cooked short-grain white rice, warm (Steamed White Rice is what to make)
2 tbsp gochujang
2 tbsp honey
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp toasted sesame oil
4 garlic cloves, minced
1 tbsp peeled and minced fresh ginger
1/4 cup water
3 scallions, thinly sliced
1 cup thinly sliced cucumber
1 tsp toasted sesame seeds
1Whisk the sauce — Stir the gochujang, honey, soy sauce, rice vinegar, sesame oil, and water together until smooth.
2Bloom the aromatics — Heat the neutral oil in a skillet over medium heat. Add the garlic and ginger and cook for 1 minute, until fragrant but not colored.
3Reduce the sauce — Pour the sauce into the pan and simmer for 3–4 minutes, stirring, until it thickens enough to coat the back of a spoon.
4Warm the chicken — Add the sliced chicken and toss until heated through and coated with sauce, 2–3 minutes.
5Build the bowls — Divide the warm rice among four bowls. Spoon the chicken and sauce over the rice, then arrange the cucumber alongside.
6Add the toppings — Scatter the scallions and sesame seeds over the bowls. Serve immediately.
The sauce has to coat a spoon before the chicken goes in. Thin sauce slides straight off and pools in the rice.
Everything here is a reheat, not a cook. Total pan time is under 10 minutes once the sauce is mixed.
The cucumber is doing real work — it's the only cold, crunchy, unsweetened thing against a sauce this rich.
